Quartz countertop shimmied on top of base cabinets

Hello - really need some advice on my dilemma. Our base cabinets were installed not-level from left to right. The countertop installers installed the counter on top of the cabinets and shimmied up the countertop between the top of the counter and the countertop. There is now a 1/2 gap on the left side that gets smaller is the slope progresses to the right. The adhesive they used barely touches the cabinets and I'm worried there isn't enough support under the countertop. What should I do?
1. Remove the countertop and level the cabinets.
2. Add shimmied strips to areas that are not supported.
3. Leave as is, it will be fine.
